Recipe: Prawn & Tomato Pasta

Prawn & Tomato Pasta  (inspired by a Nigella dish) First of all cook some pasta in a pan While it's cooking in another pan pour some olive oil. Cut come cherry tomatoes around the equator, add these to the hot oil, taking care as they will spit! Add some grated garlic and some salt, when Nigella did her version of the dish she added chilli flakes, but I'm not a fan, so I'm choosing to add a squirt of ginger paste for a warming taste. In the pan next add your peeled uncooked prawns, cook them until they have turned pink.  Strain your pasta, and add it to the other pan, along with some chives and parsley. Combine, serve and enjoy. Feeling fed up

  I'm feeling fed up. My health is really getting to me big time. My fortnightly injection seems to not be as efficiant as it used to be, my medication seems to be less good at doing what it should be doing. Now I know I can't be put on anything stronger as my stomach wont be able to deal with it... damn having a fragile one! I decided at the start of the new year to keep pushing to find a job to do. Now I know I am limited, but do know what I am good at.  I have been looking for social media roles, because I know I am good at that, and back during the pandemic did an online course on it that I passed. I am also looking for radio and tv work, as I have experiance of both, and again during the pandemic, did a basic online journalism course. I keep getting knocked back, and know the reason why. It's not because of lack of skills or determination, it is the fact I have health issues and companies would rather take on someone who is fully able bodied and fit.  This makes me s...

Continuing struggle with Fibromyalgia As I have said before, it is a bit like an amplifier, turning up the volume on my pain and other issues. Just because I've not written about it, don't mean to say I'm not living it. My pain level most days is around 4 to 6 out of 10. The last few days, however, things have not been too good, as my Facebook posts show! THURSDAY 29th FEB Well, as you may know, I am always in pain to some degree and do push myself on a regular basis.  Well in the last few hours been getting twinges which point to one thing, a fibro flare up. It's been a while since I've had one, but here it comes, wonder what time it will show up? FRIDAY 1st MARCH Well I've been awake since about 2am, in agony, pain at about 9 out of 10, am all tingly and feels like bad pins and needles, with horrendous aches - it's one hell of a fibro flare up. Recipe: Chinese Style Pork Strips

 Recipe: Chinese Style Pork Strips Slice and dice a red onion and a pepper, also cut up a bunch of spring onions, and thinly cut up a few cloves of garlic. Add to a large sauce pan and fry off, along with some salt and pepper, also some paprika. Add to the pan some strips of pork. After about 15 mins add an egg cup full of red wine vinegar, soy sauce and apple juice. Bring to the boil and then simmer for a further 15 minutes, then turn the heat off, leave covered. As with all one pan dishes, time is your friend. Leave for around 4 hours to a day. When ready to eat, bring to the boil again and simmer for 20 minutes. To serve cook some microwave rice or maybe even some rice noodles. Baked Sausage & Beans (with added footnote tip)

Baked Sausage & Beans Here's a simple and quick meal. Here's what you need 1 pack of sausages 1 onion 1 tin of baked beans To start with gently fry a chopped onion, once fried put onion in to a casserole dish. In the same frying pan fry your sausages until lightly browned. Add the sausages to your casserole dish. Open your tin of baked beans and add on top of your sausages and onion, finally since out your bean tin and add the water. Cook in the oven for around half hour to 45 minutes on about gas mark 7. Serve with microwave rice of your own choice. Instead of baked beans you could use barbecue baked beans for a smoky taste. You could add paprika or maybe even garlic granules. FOOTNOTE TIP:  Here's an idea to add another dimension, why not add salami to the top if it for a spicy hit
